The quality of poultry eggs can directly affect the edible value and commercial value, so egg quality detection is particularly important in poultry industry. Traditional quality detection methods are mainly based on manual observation and chemical analysis, which are costly and inefficient for industrial production. This paper reviewed the current research of intelligent sensing technology in detection of internal and external quality inspection of poultry eggs. The main techniques include acoustic sensing, machine vision, mechanical properties, spectroscopic technology, dielectric properties, and electronic nose technology. The merits and drawbacks of each technique were introduced and analyzed. This review aims at providing a reference basis for the application of intelligent sensing technology in quality detection of poultry egg.
